A delightful recipe that transforms zucchini into rich, fudgy brownies, perfect for dessert or breakfast without any guilt!

  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking pan.
  2. Mix the grated zucchini with sugar, brown sugar, vegetable oil, and vanilla extract in a large bowl until well blended.
  3. Whisk together the flour, cocoa powder, baking soda, and salt in another bowl.
  4. Combine the dry ingredients with the wet mixture, stirring gently until fully mixed.
  5. Fold in the chocolate chips if using.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 25-30 minutes until edges are set and a toothpick comes out clean or with a few crumbs.
  8. Cool the brownies in the pan before slicing into squares.

Notes

Make sure to squeeze out excess moisture from the zucchini for best results. Store in an airtight container for up to 3 days or refrigerate for a week.
