A delightful blend of flavors and textures, this zucchini bread is moist, sweet, and spiced, making it a perfect treat any time of day.

Ingredients

  • 2 cups grated zucchini
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Combine the grated zucchini, sugar, oil, eggs, and vanilla extract in a large mixing bowl. Stir until well blended.
  3. Whisk together the flour, baking soda, baking powder, cinnamon, and salt in another bowl.
  4. Mix the dry mixture into the wet ingredients. Stir until just blended, folding in the nuts if using.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Wrap cooled bread tightly in plastic wrap and store in an airtight container for up to 3 days. Can be frozen for up to 3 months.
