A delightful summer dessert featuring light and fluffy biscuits layered with sweet strawberries and creamy whipped topping.

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (for strawberries)
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar (for the biscuits)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 3/4 cup milk

Instructions

  1. Combine the sliced strawberries with 1/4 cup of granulated sugar and let them sit for 30 minutes.
  2. Whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  3. Preheat your oven to 425°F (220°C). In a large bowl, mix the flour, 1/2 cup sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined, then knead the dough gently and pat it into a round about 1 inch thick. Cut out biscuit shapes.
  5. Bake for 15-20 minutes, or until golden brown.
  6. Slice each biscuit in half, layer with strawberries and whipped cream, then top with the other half.

Notes

Best enjoyed fresh. Store biscuits and strawberries separately to maintain texture.
