Delicious chimichangas filled with creamy cheesecake and fresh strawberries, fried to golden perfection.

Ingredients

  • 8 flour tortillas
  • 2 cups cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1 cup strawberry jam
  • 1/2 cup sugar (for coating)
  • 1 teaspoon cinnamon (for coating)
  • Oil (for frying)

Instructions

  1. Mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Add the chopped strawberries and strawberry jam to the cream cheese mixture, stirring until fully combined.
  3. Spoon a portion of the mixture onto each tortilla, fold it in half, and roll it up tightly to form a chimichanga.
  4. Heat oil over medium heat in a frying pan. Fry the chimichangas until golden brown and crispy, about 2-3 minutes per side.
  5. Mix together the sugar and cinnamon in a small bowl for the coating.
  6. Remove chimichangas from the oil and immediately coat them in the cinnamon sugar mixture.
  7. Serve warm with additional strawberries or whipped cream on the side.

Notes

Best enjoyed fresh, these can also be stored in an airtight container for up to two days.
