  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • Additional sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, ground ginger, baking soda, cinnamon, cloves, and salt in a large mixing bowl.
  3. Cream the softened butter, sugar, and brown sugar until light and fluffy.
  4. Beat in the egg, molasses, and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Shape the dough into small balls and roll them in additional sugar.
  7. Place the dough balls on a baking sheet and flatten them slightly.
  8. Bake for 8-10 minutes or until the edges are set but the centers remain soft.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For added flavor, consider using fresh ginger. Dipping the tops in a milk glaze adds a sweet touch.
