Delicious raspberry crumble bars with a buttery topping, perfect for summer gatherings.

Ingredients

  • 1 cup flour
  • 1/2 cup oats
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, oats, brown sugar, baking powder, and salt until well combined.
  3. Cut in the softened butter until the mixture resembles coarse crumbs.
  4. Press half of the crumb mixture firmly into the bottom of a greased 8×8 inch pan.
  5. Layer fresh raspberries evenly over the crust, then drizzle the lemon juice over the berries.
  6. Sprinkle the remaining crumb mixture generously on top of the fresh raspberries.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
  8. Let the bars cool in the pan before slicing them into squares.

Notes

These bars can be stored in an airtight container for up to three days at room temperature or refrigerated for up to a week. They freeze well for up to three months.
