Delicious raspberry cheesecake bars featuring a buttery graham cracker crust and a rich cream cheese filling, topped with fresh raspberries.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 2 tablespoons raspberry jam (optional)

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9×9 inch baking pan with a little butter or non-stick spray to ensure an easy release.
  2. Combine the graham cracker crumbs with the melted butter, stirring until well mixed. Press this mixture firmly into the bottom of the prepared pan to form a solid crust.
  3. Beat together the softened cream cheese and granulated sugar until the mixture is smooth and creamy. Add the eggs and vanilla extract and mix until thoroughly combined.
  4. Pour the cream cheese mixture over the crust in the baking pan, spreading it evenly to cover the crust entirely.
  5. Drop fresh raspberries over the top of the cream cheese filling, and optionally swirl in raspberry jam.
  6. Bake for 25-30 minutes, until the center is set with a slight jiggle in the middle.
  7. Allow the bars to cool at room temperature, then refrigerate for at least 2 hours before cutting into bars. Serve chilled.

Notes

For best flavor, serve with whipped cream or vanilla ice cream. Store leftovers in the refrigerator for up to 5 days.
