A simple yet extraordinary Plum Upside Down Cake that combines comforting flavors of buttery cake with the natural sweetness and slight tartness of ripe plums.

  • 4 ripe plums, pitted and sliced
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Melt the butter and brown sugar together in a saucepan over medium heat and pour into the prepared pan.
  3. Arrange the sliced plums beautifully on top of the syrup.
  4. Whisk together the all-purpose flour, baking powder, and salt in a bowl.
  5. Cream the granulated sugar and remaining butter until light and fluffy.
  6. Beat in the eggs, then stir in the vanilla extract.
  7. Alternately add the flour mixture and milk to the butter-sugar-egg mixture, starting and ending with the flour.
  8. Pour the batter over the arranged plums and bake for 35-40 minutes.
  9. Let cool for a few minutes, then invert onto a serving plate.

Notes

Serve warm with vanilla ice cream or whipped cream for an indulgent treat. Store leftovers in an airtight container at room temperature for 2-3 days, or refrigerate for up to a week.
