A warm and gooey Peach Cobbler, reminiscent of summer mornings spent with family, topped with vanilla ice cream.

Ingredients

  • 4 cups fresh peaches, sliced
  • 1 cup sugar (divided; 1/2 cup for peaches and 1/2 cup for batter)
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the sliced peaches with 1/2 cup of sugar, cinnamon, and lemon juice in a bowl. Pour into a greased baking dish.
  3. Whisk together the flour, remaining sugar, baking powder, and salt. Add the milk and melted butter, stirring until combined.
  4. Pour the batter over the peaches in the baking dish. Do not stir!
  5. Bake for 40-45 minutes or until the top is golden brown.
  6. Serve warm, ideally with vanilla ice cream on top.

Notes

For a crunchy topping, consider adding oats or chopped nuts to the batter before baking.
