Mango Sticky Rice

A delightful Thai dessert of sticky rice served with sweet mango and creamy coconut sauce, bringing a taste of tropical paradise to your kitchen.

Ingredients

  • 1 cup glutinous rice
  • 1 1/2 cups coconut milk
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes, sliced
  • Sesame seeds or mung beans for garnish (optional)

Instructions

  1. Rinse the glutinous rice in cold water until the water runs clear. Soak the rice in water for at least 4 hours or, better yet, overnight.
  2. Drain the soaked rice and steam it in a steam basket lined with cheesecloth for about 30-40 minutes until it is tender.
  3. Mix together the coconut milk, sugar, and salt in a saucepan. Heat gently until the sugar dissolves, being careful not to boil.
  4. Pour the remaining coconut mixture over the warm rice once it’s cooked. Gently mix and let sit for about 30 minutes to absorb the flavors.
  5. Serve the sticky rice warm topped with slices of mango and a drizzle of the reserved coconut milk. Garnish with sesame seeds or mung beans if desired.

Notes

Ensure to soak the rice properly for the best texture. Use ripe mangoes for maximum sweetness.
