Deliciously chewy and lightly crisp lemon crinkle cookies, perfect for sharing or enjoying with tea.

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 2 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the granulated sugar and softened butter until light and fluffy.
  3. Beat in the lemon zest, lemon juice, and eggs until combined.
  4. Whisk together the all-purpose flour, baking powder, and salt in another bowl.
  5. Add the dry ingredients to the wet mixture until just combined.
  6. Chill the dough in the refrigerator for at least 30 minutes.
  7. Roll the chilled dough into balls of about one tablespoon each.
  8. Dust each ball in powdered sugar until coated.
  9. Place the balls on a baking sheet lined with parchment paper.
  10. Bake for 10-12 minutes or until lightly golden around the edges.
  11. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store leftover cookies in an airtight container at room temperature for up to 5 days.
