  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • 1 teaspoon lime zest
  • 1 cup whipped cream (for topping)
  • Lime slices (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  2. Whisk together the egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth.
  3. Pour the filling into the cooled crust. Bake for an additional 15 minutes, then allow to cool at room temperature.
  4. Refrigerate the pie for at least 3 hours before serving to allow flavors to meld.
  5. Top with whipped cream and garnish with lime slices before serving.

Notes

Use fresh key lime juice for the best flavor. Press the crust firmly to avoid a crumbly texture once baked.
