A delightful blueberry cobbler with a sweet and tart filling and a fluffy golden topping, perfect for summer.

Ingredients

  • 2 cups fresh blueberries
  • 1 cup granulated sugar
  • 2 teaspoons lemon juice
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the blueberries with 1/4 cup of sugar and lemon juice in a mixing bowl, then pour into a greased baking dish.
  3. Whisk together the all-purpose flour, baking powder, salt, and remaining sugar in another bowl.
  4. Mix the melted butter, milk, and vanilla extract in a separate bowl, then combine with the dry ingredients.
  5. Pour the batter over the blueberries in the baking dish.
  6. Bake for 30-35 minutes, or until golden-brown.

Notes

Serve warm with vanilla ice cream or whipped cream. Leftovers can be stored in an airtight container in the refrigerator for 2-3 days.
