  • 3/4 cup granulated sugar

  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar, packed
  • 1 cup powdered sugar (for icing)
  • 12 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a bowl.
  3. Cream together the softened butter and granulated sugar until fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Mix the cinnamon and brown sugar in a small bowl.
  7. Roll out the dough on a floured surface into a rectangle.
  8. Roll the dough up tightly to form a log, then slice into cookies.
  9. Bake for 10-12 minutes until the edges are lightly golden.
  10. Mix the powdered sugar with milk until smooth and drizzle over the cooled cookies.
