Creamy cheesecake on a flaky pie crust topped with a cinnamon-sugar blend, capturing the nostalgic flavor of churros.

Ingredients

  • 1 package of refrigerated pie crusts
  • 2 packages of cream cheese (8 oz each)
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 tablespoon cinnamon
  • 1/4 cup melted butter
  • 1/2 cup sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Press the pie crusts into a baking dish.
  3. Beat together cream cheese, 3/4 cup sugar, and vanilla until smooth.
  4. Add the eggs one at a time, mixing well after each.
  5. Pour the cream cheese mixture over the pie crust and spread evenly.
  6. Combine cinnamon with the remaining 1/2 cup sugar and sprinkle over the cheesecake layer.
  7. Drizzle melted butter over the mixture.
  8. Bake for 30-35 minutes until set.
  9. Cool completely before slicing into bars.

Notes

Serve warm or chilled with a scoop of vanilla ice cream or whipped cream. Stores well in the fridge for 5 days and can be frozen for a month.
