A decadently rich dessert featuring a velvety chocolate filling on a crisp graham cracker crust.

Ingredients

  • 1 1/2 cups chocolate graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 1/2 cup water
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semisweet chocolate chips
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the chocolate graham cracker crumbs with melted butter until everything is well moistened. Press this mixture firmly into the bottom and up the sides of a 9-inch pie plate. Bake for about 8-10 minutes, then set aside to cool.
  2. Combine the sugar and water in a saucepan. Bring it to a boil and cook until the mixture thickens into a syrupy consistency, about 5 minutes.
  3. Remove the syrup from the heat and whisk in the eggs, one at a time. Stir in the vanilla extract. Return to low heat for another 5 minutes, stirring constantly to create a smooth base.
  4. Stir in the semisweet chocolate chips into the syrup mixture until melted and smooth, allowing it to cool slightly.
  5. Beat the heavy cream in another bowl until stiff peaks form. Gently fold this whipped cream into the chocolate mixture until fully combined.
  6. Pour the velvety chocolate filling into the cooled crust and smooth the top with a spatula.
  7. Refrigerate the pie for at least 4 hours, or until it’s perfectly set.

Notes

Serve with a dollop of whipped cream or a dusting of cocoa powder. Pairs well with coffee or vanilla ice cream.
