  • 1 tablespoon baking powder

  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 egg (for egg wash)
  • 1 tablespoon sugar (for topping)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Mix together the cream, egg, and vanilla extract in a separate bowl.
  5. Combine the wet and dry ingredients and stir until just combined. Gently fold in the blueberries.
  6. Knead the dough on a floured surface until it comes together, then pat it into a circle about 1-inch thick and cut into wedges.
  7. Prepare the scones on the baking sheet. Brush the tops with beaten egg and sprinkle with sugar.
  8. Bake for 15-20 minutes until golden brown.
  9. Cool slightly before serving.
