A delightful Blueberry Lemon Bread that combines sweet blueberries with zesty lemon for a perfect treat.

  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • Zest of 1 lemon
  • 1 cup fresh blueberries
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  3. Cream the softened butter and sugar together until light and fluffy, a perfect base for your batter.
  4. Beat in the eggs one at a time, then stir in the vanilla extract, sour cream, lemon zest, and lemon juice until well mixed.
  5. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined. Be careful not to overmix!
  6. Gently fold in the fresh blueberries, ensuring they are evenly distributed throughout the batter.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula for an even bake.
  8. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
