Delightful blueberry hand pies with a flaky crust and a sweet, bubbly filling.

Ingredients

  • 1 package of pie crusts (store-bought or homemade)
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the fresh blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract in a bowl.
  3. Roll out the pie crusts and cut them into circles, about 4-5 inches in diameter.
  4. Fill each circle with a spoonful of the blueberry mixture.
  5. Seal the pies by folding the other half of the circle over the filling and pressing the edges.
  6. Prepare the egg wash by beating the egg and milk together.
  7. Arrange the hand pies on a baking sheet lined with parchment paper.
  8. Bake for 20-25 minutes or until golden brown.
  9. Cool slightly before dusting with powdered sugar and serving.

Notes

Serve with vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to 2 days.
